MY ABSOLUTE FAVORITE!!!

I make this the night before I want to serve it.
1 pkg french vanilla cream cookies (white oreos)
2 eggs
2 cups powdered sugar
1/2 cup butter, softened
8-10 nice size, ripe peaches, peeled & diced (the more the merrier)
1/2 pt. whipping cream
Crush cookies into fine crumbs. Spread 3/4 of the crumbs in a 9x13 pan, press down well. Cream eggs, powdered sugar, and softened butter, and spread creamed mixture over crust. Peel peaches and slice over creamed mixture. Cover entire top with peaches. Whip 1/2 pt of whipping cream for 3 min (unsweetened-do not add sugar). Spread over peaches. Top with remaining crushed crumbs. Chill for at least 4 hours or overnight. SO GOOD!!!
