Pumpkin Chocolate Chip Cookies (Amber Hanks)


Soooooo Good and MOIST!

These amounts are doubled:

1 cup butter or margarine, softened
3 cups granulated sugar
2 eggs
29 oz can pumpkin
1/2 cup of sour cream (or vanilla yogurt)
2 tsp vanilla
5 cups flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
2 tsp nutmeg
2 tsp cinnamon (or 3 tsp pumpkin pie spice)
2 cups semi-sweet chocolate chips

Preheat oven to 350 degrees. In a large mixing bowl, cream together the butter and sugar using medium speed of an electric mixer. Beat in the egg, pumpkin, sour cream and vanilla; set aside. In a separate bowl, mix the flour, baking powder, baking soda, salt and spices. Add the dry ingredients to the creamed mixture a little at a time, beating until well combined. Stir in the chocolate chips. Drop dough by rounded teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 350 degrees for 15 minutes or until edges are golden brown.
