Oven Fried Chicken

8-9 chicken pieces (legs, thighs, wings, breasts)
1/3 cup vegetable oil
2/3 stick butter
1 cup all-purpose flour
1 tsp salt
2 tsp black pepper
2 tsp paprika
1 tsp garlic salt

Place the oil and butter in shallow cooking pan (I use a 9x13 pan) and put it in a preheated 375 degree oven to melt and set aside. In a large ziploc or paper sack combine the flour and seasonings. Roll the chicken pieces, 1or 2 at a time, in the melted butter-oil mixture, then drop them in the sack and shake to cover. Place on a dish or wax paper.
Wipe out the rest of the butter-oil and place chicken in the pan. Bake for 45 minutes. Turn over and bake 10 more minutes longer or until the top crust begins to bubble. Serve hot or cold. Serves 3-4 (depending on the size of chicken).
