Cinnamon Rolls (Judy Storms)

Oh these are sooooooo good!

2 tbsp yeast (active yeast)
1/4 warm water
mix in big bowl 3 eggs (well beaten)
1/2 cup crisco butter shortening (or you can use just butter)
1/2 cup sugar
1 cup warm water
2 tsp salt
bread flour

Mix warm 1/4 cup warm (just about hot, but not hot) water with the yeast. I just sprinkle the yeast on the water and swirl it around. Set aside. Then beat the eggs in a bowl then add the rest of the ingredients and mix. Then I switch to the bread paddle on my machine and add 2 1/2 cups of flour (I use bread flour) and mix. Now stir in the yeast mixture. Then add 2 1/4 cup of more flour. Dough will be sticky. cover and let rise.
Punch down, you can divide in two or three sections for rolling out.

For the filling...
1 stick of butter
2 tsp cinnamon
1 cup brown sugar

put the butter on the rolled out dough, remember to divide like you did the dough so it goes on all of it, and then the cinnamon sugar. After you put them on a cookie sheet (I put 5 in a row), let rise again, and then bake at 350 for about 12-14 min. Check it at 12-13 min. Everyones oven is different.

Cream Cheese Frosting...
1/2 cup butter
6 oz cream cheese
1 tbsp vanilla
4 cups powdered sugar
Mix together. You may have leftover. Just keep it in the fridge for your next batch, if you make another one within a week. Scoop some of the icing in a bowl and microwave it so it is nice and smooth and then put it on the rolls.
