Green Scrambled Eggs (St. Patricks Day idea)-Elysa Valentino

Place in blender:
4 eggs
dashes of garlic powder
dashes of salt & pepper

Place 2 handfuls of spinach in a skillet and turn heat on to medium. Stir gently while the spinach wilts, about 3 minutes. When spinach is wilted, dump into blender with eggs and seasoning. Blend until spinach is pureed. (add in a few drops of green food coloring to make the color more rich for St. Patricks Day)

Return pan to medium heat and add:
1 TBSP butter
When butter is melted, pour in spinach/egg mixture
Add 1/4 cup grated mozzarella cheese
Allow it to cook for about 1 minute before starting to scrape the bottom and scramble.
Continue to scrape and stir until it is fully cooked.
Mmmm! Looks so disgusting :-)
