Cream Cheese Iced Pumpkin Cake/Bars (Gma Glenys)



I don't like pumpkin pie, nor am I a cake fan... but LOVE these! They are sooo moist.

Cream together:
3 cups sugar
1, 1/2 cups veg oil
1 lg can pumpkin
6 eggs

Sift in:
3 cups flour
3 tsp baking soda
1, 1/2 tsp cinnamon
1 tsp salt

Beat until well blended. Bake @ 350 for 30 minutes on greased 11/14 cookie sheet
Let cool before frosting

Cream Cheese Frosting:
1 cube butter
1 8oz cr cheese
5 cups powdered sugar
2 tsp vanilla

beat together and spread over top.


You can also split the batter onto two baking sheets. You may need to make a little more cream cheese, but this makes for thinner bars.
