Monday Meatloaf




Picture does not show the sauce/topping.
We added some carrots, onion and potatoes on the side, which made it take longer to cook
VERY DELICIOUS, but a little time consuming.

1, 1/2 lbs ground beef (20% fat)
1/2 lb ground pork

2 eggs
1/2 cup milk
1/4 tsp dried thyme, crumbled
1/4 tsp rubbed sage
1/2 tsp celery salt
1/2 tsp black pepper
1/2 tsp garlic powder
1 tsp onion powder
1 tsp ground mustard
1 tsp salt
1 Tbsp worcestershire sauce

1 cup dried bread crumbs (plain)
2 medium carrots, shredded fine in food processor
(1 celery stick chopped-optional)

Sauce for Topping:
1/2 cup catsup
2 Tbsp Honey
1 Tbsp Dijon mustard
Pinch cayenne pepper
3 slices cooked bacon (cooked through, but not crisp)

Optional side:
4 potatoes, 1/2 onion, 3 carrots all diced around loaf

Preheat oven to 350. Mix together beef and pork in large bowl and set aside. In small bowl, combine next 11 ingredients and mix well with fork so egg and milk are thoroghly combined with spices. Add egg mixture to meat. Add bread crumbs, carrots and optional celery and combine all ingredients thoroughly with hands (remove rings) :) Shape meat mixture into a loaf in a 9x13 pan. Shape to resemble a loaf pan (don't let meat touch sides of pan). This allows meatloaf to brown on all sides and will give the fat space to drain away from meat. Bake at 350 for 50-60 minutes (OR TILL MEAT IS COOKED THROUGH-165 degrees)
While meatloaf is cooking, combine catsup, honey mustard and cayenne in small bowl and mix well. Cook bacon and set aside.
During the last 15 minutes of cooking, top meatloaf with sauce and bacon. Coat top of the bacon with a little sauce so it doesn't burn, bake last 15 min. Remove and let stand 10 min before slicing.Best served with side of potatoes (mashed, baked, or diced)
