Tortellini with Salmon & Peas


I LOVE TORTELLINI!
I used left over salmon from last nights dinner which made it much easier to make this!
You can even substitute with Chicken

8 oz fresh salmon fillet, skin removed
salt and pepper
1 lb fresh cheese tortellini
3/4 cup light mayo
2 tbsp fresh lemon juice
1 cup frozen peas, defrosted or boiled
1/2 cup finely chopped fresh basil leaves
Other seasonings desired for Salmon

Preheat grill to high; oil grate. Sprinkle salmon with desired seasonings (Pepper, lemon pepper, garlic salt, etc...). Grill salmon, turning once, until cooked through and easily flaked with a fork, about 12-15 minutes total.
Meanwhile, bring a pot of salted water to a boil. Cook tortellini according to package label instructions, about 7 minutes. Drain and run under cold water, then drain again. Boil peas, if desired, until done.
In a large bowl, whisk together mayo and lemon juice. Mix in tortellini and cooked peas to coat. Season with salt. Gently stir in salmon and basil and serve.
