Zucchini Bread


grease with Pam, then lightly coat with flour for a non-stick, easy removal

(I did ONE big loaf, instead of 2-3 smaller ones)

1 cup white sugar
1 cup brown sugar
3 eggs
1 cup veg oil
1 tblsp vanilla
2 cups graded zucchini
Mix together

In seperate bowl add:
3 cups flour
1 tsp salt
1 tsp baking soda
1 tbsp cinnamon
1/4 tsp baking powder
1/2 cup chopped nuts (optional)

(May sprinkle, cinnamon/sugar mixture over top of prepared loaves)
Bake at 350 degrees for 50-60 minutes
Makes 2-3 loaves
