Cheesy Black Bean Quesadilla's

I get the Veggie Burgers at Sam's Club and they are SOOOO GOOD!

2 Black Bean Veggie Burgers, thawed and cut into 1/4 inch pieces
1/2 cup salsa
1/2 cup shredded cheddar cheese or Monterey Jack Cheese (2 oz)
1/4 cup shredded Pepper Jack Cheese (1 oz)
2 tblsp finely chopped red or green bell peppers
2 tsp Southwest or Mexican seasoning
10 8-inch flour tortillas
1 tblsp margarine, melted
2, 1/2 cups shredded lettuce (optional)

(I added diced tomatoes and corn)
Great to have a guacamole/salsa/ranch dip

In medium bowl, toss together veggie burger pieces, salsa, cheddar cheese, peeper jack cheese bell pepper, and seasoning
Use pizza cutter to cut tortilla's into 7-inch triangles (Save trimmed edges for another use)
Place about 2 tblsp burger mixture in center of each triangle. Fold corners of large triangles over filling, completely enclosing filling and making smaller triangles. Secure with toothpicks.
Place on baking sheet, toothpick side up.
Brush with margarine.
Bake at 375 for 9-12 minutes
Arrange on top of shredded lettuce
Dip in Salsa/ranch or guacamole
Serve Immediately
