Chocolate Cake & Cream Cheese Frosting









Thick Cake:
1 cup butter
1 cup water
4 Tbsp heaping cocoa
Sift together:
2 cups flour
2 cups sugar
1/2 tsp salt
Pour chocolate over dry ingredients, genlty mix
In seperate bowl, combine the following:
2 eggs, lightly beaten
1 tsp baking soda, dissolved in a little water
1 tsp vanilla
Combine with chocolate ingredients... then add:
1/2 cup sour cream
Gently mix. Do not over mix!

Bake in an 8, 1/2 x 11 pan at 325 for 50-60 minutes


Chocolate Cream Cheese Frosting:
4 oz cream cheese
1/2 cup Butter
3 cups powdered sugar
milk
2 tsp pure vanilla extract
4 tbsp cocoa powder

cream together butter, vanilla and cream cheese. Add in powdered sugar and cocoa powder until creamy and smooth. Slowly add in milk till the right consistency. I like mine fluffy, so I beat it on high for 3 minutes.

OR

Chocolate cream cheese frosting:
1/4 cup butter, softened
1, 8 oz pkg cream cheese
3, 1 oz squares unsweetened chocolate, melted
dash of salt
3 cups powdered sugar
1/3 cup half and half
1 tsp vanilla

Cream together the butter and cream cheese. Add melted chocolate, salt, sifted powdered sugar, half and half, and vanilla. Beat until smooth and spreadable.
