"Cafe Rio" Pork Burrito, Quesadilla or Salad







**Plan to make this a WHOLE day before!

Make tortilla's (Costco has the best kind), layer chopped romaine lettuce, diced tomatoes, then add pork, beans, and rice, then sour cream, guacamole, shredded cheese, and dressing to top it off!

Cilantro Lime Ranch Dressing: (may want to double)
1 Buttermilk Ranch dressing package
-1 cup milk, 1/2 cup mayo, 1/2 cup sour cream and packaged seasoning
1 small bunch cilantro, roughly chopped
1/2 can green chilies
1 lime juice plus more for taste

Blend all ingredients in Blender

Pork Barbacoa:
Put boneless pork butt in a crock pot with:
2 cloves minced garlic
1 small can diced green chilies
1 can coke (not diet)
1 can El Pato sauce, Mexican Hot Style
1 1/2 cup brown sugar
2, 15 oz cans tomato sauce

Cook pork roast on low for 8-10 hrs, then shred well. Add spices and put back in crockpot to marinate few more hours.

Black Beans:
2 can black beans, rinsed
2 Tbsp finely minced onion
2 cloves minced garlic
1 tsp ground cumin
1 cup tomato juice
3 Tbsp chopped Fresh cilantro
1 tsp. salt

Fry onion, garlic and cumin in a small amount of olive oil. Add beans, tomato juice, cilantro and salt and heat through.

Cilantro Lime Rice:
3 cups water
3 cups rice (Jasmine rice)
3 chicken bouillon cubes
1 tsp salt
1/4 cup lime juice
1/2 small onion
2 cloves garlic
1/2 bunch cilantro
1 small can green chilies

Place water, rice, bouillon, and salt in pot. Bring to a boil. Place lime juice, onion, garlic, cilantro and green chilies in a blender and puree. Stir into rice. Simmer, covered, for about 25 minutes.


**Additionally need:
Tortilla's
Romaine lettuce
Diced Tomatoes
Sour Cream
Guacamole
Shredded Cheese

Best pork to buy is boneless pork shoulder!
