Green Scrambled Eggs (St. Patricks Day idea)-Elysa Valentino

Place in blender:
4 eggs
dashes of garlic powder
dashes of salt & pepper

Place 2 handfuls of spinach in a skillet and turn heat on to medium. Stir gently while the spinach wilts, about 3 minutes. When spinach is wilted, dump into blender with eggs and seasoning. Blend until spinach is pureed. (add in a few drops of green food coloring to make the color more rich for St. Patricks Day)

Return pan to medium heat and add:
1 TBSP butter
When butter is melted, pour in spinach/egg mixture
Add 1/4 cup grated mozzarella cheese
Allow it to cook for about 1 minute before starting to scrape the bottom and scramble.
Continue to scrape and stir until it is fully cooked.
Mmmm! Looks so disgusting :-)

Healthy flour-less breakfast muffins

5 cups rolled oats (NOT the instant kind)
dash of salt
1/4+ cups each of ad-ins (think dried fruit, apples, chocolate chips, nuts, chia seed, flax seed)
2 tsp cinnamon
2 1/2 cups total of a COMBINATION of mashed, overripe bananas and unsweetened applesauce
2 1/3 cups warm water
4 tbsp maple syrup or honey
1/4 cup coconut oil (warm-liquid)
2 1/2 tsp vanilla extract

Preheat oven to 380 degrees. Line approximately 20 cupcake tins (or coat with non-stick spray). Combine all dry ingredients in a large bowl. Stir until mixed.
Combine all wet ingredients in medium-sized bowl. Stir until combined. Pay extra attention to the banana and coconut oil. If the coconut oil is cold, you might want to heat it up slightly to get rid of the waxy consistency. Mix wet ingredients into dry ingredients. Stir well until combined. Spoon/pour batter into muffin tins. Cook for approximately 18-20 minutes. You can broil them for 2 minutes to brown the tops-optional. Eat immediately or save and pack for breakfast/snacks.

Best Breakfast Casserole

24 oz frozen Souther Style (little cubes) hashbrowns (I sometimes use a 32 oz bag)
1/2 cup butter (I use less, unless I am trying to fatten up skinny guests)
8 beaten eggs
2 cup half & half (or you can use milk for thinner consistency, or cream for thicker)
1/2 tsp season salt
1 cup fresh chopped mushrooms (optional)
2 small green onions (split in half and chopped)
2 cups grated swiss cheese
2 cups grated cheddar cheese
1.5 cups diced ham
Place butter in 9x13 pan and set in oven to preheat at 375. When butter is melted, add frozen hashbrowns and bake for at least 20 minutes. While hashbrowns are baking, mix remaining ingredients in bowl. Remove hashbrowns from oven and pour egg mixture over top. Return to oven and bake an additional 35-45 minutes (until cheese browns slightly).

Cinnamon Rolls (Judy Storms)

Oh these are sooooooo good!

2 tbsp yeast (active yeast)
1/4 warm water
mix in big bowl 3 eggs (well beaten)
1/2 cup crisco butter shortening (or you can use just butter)
1/2 cup sugar
1 cup warm water
2 tsp salt
bread flour

Mix warm 1/4 cup warm (just about hot, but not hot) water with the yeast. I just sprinkle the yeast on the water and swirl it around. Set aside. Then beat the eggs in a bowl then add the rest of the ingredients and mix. Then I switch to the bread paddle on my machine and add 2 1/2 cups of flour (I use bread flour) and mix. Now stir in the yeast mixture. Then add 2 1/4 cup of more flour. Dough will be sticky. cover and let rise.
Punch down, you can divide in two or three sections for rolling out.

For the filling...
1 stick of butter
2 tsp cinnamon
1 cup brown sugar

put the butter on the rolled out dough, remember to divide like you did the dough so it goes on all of it, and then the cinnamon sugar. After you put them on a cookie sheet (I put 5 in a row), let rise again, and then bake at 350 for about 12-14 min. Check it at 12-13 min. Everyones oven is different.

Cream Cheese Frosting...
1/2 cup butter
6 oz cream cheese
1 tbsp vanilla
4 cups powdered sugar
Mix together. You may have leftover. Just keep it in the fridge for your next batch, if you make another one within a week. Scoop some of the icing in a bowl and microwave it so it is nice and smooth and then put it on the rolls.
ENJOY!!!

Chocolate Protein Squares (Elysa Valentino)

Picture taken by Elysa Valentino

Combine in food processor; pulse until crumbly:
1 c. almonds
1 c. walnuts
½ c. cocoa
1 tsp. cinnamon
½ tsp. salt

Pour mixture into medium bowl and set aside.

In food processor, pulse until well chopped:
15 dates

Warm the following ingredients over medium heat or in the microwave until softened/combined. Add to dates in processor and blend until smooth.
¼ c. honey
¼ c. peanut butter
3 TBS coconut oil
2 tsp. vanilla

Add dry mixture gradually to wet ingredients in processor and pulse until evenly blended. Fold in 1/3 c. air-popped quinoa* and turn out mixture into a coconut-oil-greased 9x9 pan (or, for a thinner bar, a 9x13). Press into edges and refrigerate until firm. Cut into 1-inch squares and store covered, chilled.

*To air-pop quinoa: place 1/3 c. dry quinoa in an air popper; turn it on and set timer for 3 minutes. After 3 minutes, remove it from the air popper. It is done and ready to add to your recipe. (There are other methods of popping quinoa, but this one is the simplest. If you don’t have an air popper, heat a small amount oil over medium heat and add quinoa, stirring until quinoa is golden, about 3 minutes.)

1/3 water, 1/3 greens, 1/3 fruit

Kale
Collards/chard
Spinach
1 apple
Frozen mixed berries

Kale, spinach and collards are high in micronutrients, low calories and very nutrient dense

This one is with almond milk, banana, ice, greens and a little blueberries:

This is what I put in my chocolate smoothies and you can't even tell it has greens in it, except for the nasty color :-)
