Chicken-broccoli Casserole

3-4 chicken breasts-boiled till done
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 cup mayo
1 tsp lemon juice
1 1/2 pkgs of frozen broccoli spears, cooked
1 cup grated cheddar cheese for topping
Bread crumbs (ritz cracker crumble) for topping
(I actually prefer a pasta with this casserole, so I either add broken up cooked spaghetti, penne or macaroni)

Preheat oven 350 degrees. Boil chicken and break into pieces when cool. Cook broccoli. Combine ingredients. Layer in 9x13 pan, beginning with (optional pasta) broccoli, chicken sauce, cheese. Bake for 25 min. Add crumbs on top for last 10 minutes

Best Breakfast Casserole

24 oz frozen Souther Style (little cubes) hashbrowns (I sometimes use a 32 oz bag)
1/2 cup butter (I use less, unless I am trying to fatten up skinny guests)
8 beaten eggs
2 cup half & half (or you can use milk for thinner consistency, or cream for thicker)
1/2 tsp season salt
1 cup fresh chopped mushrooms (optional)
2 small green onions (split in half and chopped)
2 cups grated swiss cheese
2 cups grated cheddar cheese
1.5 cups diced ham
Place butter in 9x13 pan and set in oven to preheat at 375. When butter is melted, add frozen hashbrowns and bake for at least 20 minutes. While hashbrowns are baking, mix remaining ingredients in bowl. Remove hashbrowns from oven and pour egg mixture over top. Return to oven and bake an additional 35-45 minutes (until cheese browns slightly).

Basic Chicken Veg Pasta/Rice Casserole

1 can cream of chicken soup
1 can cream of mushroom soup
1 can mushrooms, chopped
1-2 cups chopped mixed vegetables (corn, peas, broccoli, etc)
1/2 cup milk
2 cups cooked rice (I always use leftovers)... or pasta

3 cups diced chicken, or try smoked sausage/kielbasa
2 cups shredded cheese (plus 1 cup to top with)

Mix together and place in greased casserole dish. Cover and bake at 350 degrees for 30 minutes. Uncover and cook for additional 5 minutes.

Baked Ziti

1 lb ground beef
1 cup onion, chopped
2 garlic cloves, minced
1 (32 oz) jar meatless sauce
1 cup chicken broth
1 tsp dried oregano leaves
1 (16 oz) pkg ziti pasta, cooked and drained
3 cups shredded mozzarella cheese
1 cup grated parmesan cheese

Preheat oven to 350 degrees
In a large skillet, cook ground beef, onions, and garlic over medium-high heat for 6-8 minutes or until beef is browned, stirring frequently.
Stir in spaghetti sauce, chicken broth and oregano
Reduce heat and simmer for 10 minutes
Stir 1 cup of the sauce into the cooked ziti noodles
Spoon 1/2 the mixture into a greased 9x13" dish
sprinkle with 1 1/2 cups mozzarella cheese and 1/2 cup Parmesan cheese
Top with 2 cups sauce, then remaining ziti mixture and remaining sauce
Cover and bake 20 minutes at 350 degrees
Sprinkle with remaining mozzarella and parmesan cheese
return to oven and bake uncovered for 5-10 minutes.

Breakfast Casserole



12 eggs
1 lb bacon or sausage (or both), cooked and crumbled
1 can cr of mushroom soup
4 oz can mushrooms, diced
1 sm onion, chopped (possible pre cooked with a bit of butter to soften)
1 green pepper (optional)
1 bag hashbrowns or tater tots
2 cups grated cheese (cheddar)

Preheat oven to 350 degrees.
Cook potatoes according to package directions. Put into bottom of greased 9x13 pan. Put cooked meats on top of potatoes. Mix eggs and soup together. Pour over meats and potatoes. Sprinkle with mushrooms, peppers, onions and cheese. Bake @ 350 for 1 hour, or until knife inserted in middle comes out clean. ENJOY with ketcup, or salsa!

Homemade Mac N Cheese (Jody Counsel)


2 cups elbow macaroni, cooked according to pkg instructions and drain
3 tbsp butter
2 tbsp flour
1/2 tsp salt
dash of pepper
2 cups milk
1/4 cup chopped onion
8 oz cheddar cheese
top with italian bread crumbs or crumbled ritz crackers (optional)

Preheat oven to 350 degrees
In saucepan, melt butter; blend in flour, salt and pepper. Add milk. Cook and stir until thick and bubbly. Add the onion and the cheese. Stir until melted.
Mix the cheese sauce with the macaroni. Put into a 1, 1/2 quart casserole or an 8x10 pan
Bake at 350 degrees for 35-40 minutes. Serves 6

Basic Casserole

3 tblsp margarine
1/2 onion chopped
3 tblsp flour
2 cups milk
Vegetable puree (healthy)-optional
cooked/prepared pasta of your choice
precooked veggies (peppers/broccoli, etc..)
precooked meat (diced chicken, salmon, etc..)
1-2 cups shredded cheese
seasonings to your taste (salt and pepper, lemon pepper, garlic...)

Melt margarine over medium heat, add in onion to saute, Add flour and whisk briskly. Gradually add milk, whisking continuously, until it reaches a boil. Reduce heat and simmer for 3 minutes, or until sauce thickens and is bubbly. Add in puree, cheese, and seasonings. Whisk until smooth and remove from heat. Add cooked pasta, vegetables, and/or meat. Place into 9x13 pan (or smaller, depending on size of casserole you are making. Sprinkle additional cheese on top. Cover with tinfoil and bake at 350 for 40-45 minutes.

Thanksgiving Yam's/Sweet Potatoe Casserole (AllRecipes.com)





Ingredients

2 (29 ounce) cans sweet potatoes
2 tablespoons butter
1 tablespoon lemon juice
1/2 (16 ounce) package gingersnap cookies
1 (16 ounce) package miniature marshmallows
Directions

In a medium saucepan over medium heat, mix the sweet potatoes, butter and lemon juice. Break the gingersnap cookies into the mixture. Stirring occasionally, cook until thick, about 15 minutes.
Cover the mixture with desired quantity of marshmallows. Remove from heat and cover 5 minutes, or until marshmallows have melted. Serve warm.

Chicken Tetrazzini (Krista Christensen)


1 package (7 ounces) spaghetti, broken in to 2 inch pieces (I use leftover spaghetti noodles)
2 cups cooked chicken breast, cubed
1 cup shredded cheddar cheese
1 can cream of mushroom soup
1 small onion, chopped
1 can (4 ounces) sliced mushrooms, drained
1/3 cup skim milk
1/4 cup chopped green pepper (optional)
1/8 tsp pepper
Additional shredded cheese

Cook spaghetti according to package directions, drain. Transfer to a large bowl. Add the next nine ingredients and mix well. Spoon in to a 2 1/2 quart casserole dish coated with cooking spray. Sprinkle top with cheese. Bake, uncovered, at 375 degrees for 40-45 minutes or until heated through.

(If you want a little larger casserole you can use 12 oz of spaghetti and 2 cans cream of mushroom soup.)
