Quinoa Salad with Avocado, Cucumber, Tomatoes...
Cook quinoa ahead of time!!!
1 cup uncooked quinoa
2 cups water
pinch of salt
2 large tomatoes, diced
3 green onions, sliced
1/2 cup chopped cilantro
2 medium avocado's, diced
1/2 can black or garbanzo beans (optional)
1 small cucumber, chopped (optional)
Dressing:
1/4 cup FRESH Lime juice
1 tblsp olive oil
1/2 tsp cumin
salt and pepper, to taste
Using a very very fine strainer, rinse quinoa under cold water. Add quinoa, water and salt to a medium saucepan and bring to a boil over medium heat. Boil for few minutes, then cover and turn heat to low and simmer for about 15 minutes, or until water is absorbed. Remove from heat and fluff with fork. Let cool to room temp.
In a large bowl, combine quinoa, vegetables of any kind you prefer.
In a small bowl, combine dressing and wisk together.
Pour dressing over the quinoa salad and gently stir until well combined. Season with salt and pepper.
Serve chilled. My husband like to eat it with chips, like its some salsa or something :-)

Fruit Dip
1, 8oz container frozen whipped topping, thawed
1, 7oz jar marshmallow creme
1, 6 oz pkg cream cheese (plain or strawberry), whipped prior to mixing together
dash of cinnamon
1/2 tsp vanilla
Fruit to dip in
OR....
2, 8 oz cream cheese totally softened
16 oz cool whip
2 cups powdered sugar
10 strawberries mashed
Mix all together
Use bananas, strawberries, purple grapes, apples, pineapple to dip

Guacamole
3 avocados-peeled, pitted and mashed
1 lime, juiced
1 tsp salt
1/2 cup diced onion of your choice
3 tbslp chopped fresh cilantro
2 roma tomatoes, diced
1 tsp minced garlic
1 pinch ground cayenne pepper
add few dashes of cumin (optional)
In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes , and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately

1 garlic clove, minced
salt to taste
pepper to taste
1 tomatoe, seeded and diced
2 tbsp red onion, finely chopped
1/2 tsp jalapeno pepper, finely minced (optional)
Mash the avacodo with a fork and mix in the lime juice until creamy. Add garlic, salt and pepper. Gently fold in tomatoes and red onion with jalapeno, if using. Chill the guacamole for 15 minutes in refrigerator to allow flavors to blends. Serve with tortilla chips. Serves 4

Homemade Honey Butter (Rachel Gubler)
1/2 cup (1 cube) butter-softened
/14-1/2 cup honey
3 tbsp-1/4 cup powdered sugar (depends on how 'unhealthy' you want it)
whip together till smooth
place in jar(s) and refrigerate
OR
1 lb. butter (softened)
2 cups honey
7 oz bottle marshmallow cream
Whip softened butter. Add marshmallow cream and honey gradually while whipping. Makes 5 cups. Place in jars and refrigerate.

Fresh Salsa
Horrible picture, but it gives you the idea.
12 tomatoes, chopped
1 onion, chopped
1 green pepper, chopped
1 can sliced olives
1 tbsp garlic powder
1 tbsp pepper
1 tbsp salt
1/2 tbsp cumin
1/2 tbsp cilantro
2 tbsp vinegar
Hot pepper to taste (or add one yellow and one red jalopeno)
Mix all ingredients and refrigerate

Black Bean Salsa Dip (Perrero Family)
1 can black beans (rinsed & drained)
1 can white, whole kernel corn (rinsed & drained)
2-3 large tomatoes - diced
2 ripe avocados - pitted and diced
small bunch of green onions - finely chopped
small bunch of cilantro - finely chopped
add cumin to taste
1 packet of Good Seasons Zesty Italian dressing (prepare as directed)
Prepare dressing and mix in just before serving
Serve with scoop tortilla chips or serve with enchilada's...
