Diced Chicken with Cream Cheese White Sauce & Pasta

1 large chicken breast, cut into strips
1 tbsp butter or olive oil
1/2 tsp garlic powder
2 cups whole milk
6 oz cream cheese
1 tsp dried basil
3/4 cup grated parmesan cheese

While you cook your pasta (~12 oz), heat oil over medium heat and cook chicken with garlic powder until no longer pink. Add milk and heat just to boiling. Stir in the cream cheese and basil. reduce the heat, stirring constantly until cream cheese is completely melted. Remove from heat and stir in parmesan cheese. Toss hot pasta and sauce. Serve immediately.

Serve with steamed veggies or salad

Homemade Mac N Cheese (Jody Counsel)


2 cups elbow macaroni, cooked according to pkg instructions and drain
3 tbsp butter
2 tbsp flour
1/2 tsp salt
dash of pepper
2 cups milk
1/4 cup chopped onion
8 oz cheddar cheese
top with italian bread crumbs or crumbled ritz crackers (optional)

Preheat oven to 350 degrees
In saucepan, melt butter; blend in flour, salt and pepper. Add milk. Cook and stir until thick and bubbly. Add the onion and the cheese. Stir until melted.
Mix the cheese sauce with the macaroni. Put into a 1, 1/2 quart casserole or an 8x10 pan
Bake at 350 degrees for 35-40 minutes. Serves 6

Creamy Bowtie Pasta (with Grilled Chicken and Asparagus)


TASTES JUST LIKE RESTAURANTS ALFREDO PASTA! DELICIOUS!!!
A FAVORITE OF TYSONS!!!

1pkg bow tie pasta (12 oz)
1/2 cup (1 cube) butter (I might use a little less next time)
2 cloves garlic, minced
3/4 cup grated parmesan cheese
1 chicken bouillon cube
1 pint heavy cream
salt and pepper to taste
Parsley to taste
Parmesan Cheese to taste

OPTIONAL TOPPINGS:
Grilled chicken pieces
10-15 spears of asparagus (boiled and seared in a skillet for a little crunch)
1/2 cup bacon, crumbled
1/4 cup toasted pinenuts

Boil bowtie pasta in salted water, until cooked. In large skillet, melt butter. Add minced garlic and saute a minute or so. Add Parmesan cheese and bouillon cube. When the bouillon cube is dissolved, slowly stir in heavy cream and salt & pepper. Add cooked pasta to cream sauce and toss until pasta is well covered. Add blanched asparagus & chicken. Sprinkle with crumbled bacon, toasted pinenuts, parsley and Parmesan Cheese. Serve immediately.

Oh so fattening, but Oh so GOOD!!!

I used this same sauce with tortellini and it was soooo delicious!

Beef Stroganoff


3 slices or 2 cups leftover roast, cubed
1/2 tsp dry onion
1 can cream of mushroom soup
1/2 cup sour cream
Chopped mushrooms (optional)
Egg noodles or brown rice, cooked

Put meat in a crock pot and sprinkle the onion over it. In a seperate bowl, mix the sour cream and cream of mushroom soup, if you want more mushrooms the slice some and add it to this soup mix. Pour your soup mix over the meat and cook on low for 7 hours or high 3 hours.

Serve over cooked noodles or warm rice.

Alfredo Sauce (Ivie Family Recipes)

THE BEST ALFREDO SAUCE I'VE EVER TASTED!!!
2 TBSP butter
1 1/2 TBSP flour
1 cup heavy cream
1/3 cup grated Parmesan cheese
1/3 cup grated Romano cheese
dash of garlic salt
pepper to taste

Combine butter and flour in a saucepan. While stirring, add cream and bring almost to a boil. Add cheese and continue to stir until melted. Add garlic, salt and pepper.

I like to add sliced or cubed chicken to this and serve it over fettuccine noodles.

Tortellini with Salmon & Peas


I LOVE TORTELLINI!
I used left over salmon from last nights dinner which made it much easier to make this!
You can even substitute with Chicken

8 oz fresh salmon fillet, skin removed
salt and pepper
1 lb fresh cheese tortellini
3/4 cup light mayo
2 tbsp fresh lemon juice
1 cup frozen peas, defrosted or boiled
1/2 cup finely chopped fresh basil leaves
Other seasonings desired for Salmon

Preheat grill to high; oil grate. Sprinkle salmon with desired seasonings (Pepper, lemon pepper, garlic salt, etc...). Grill salmon, turning once, until cooked through and easily flaked with a fork, about 12-15 minutes total.
Meanwhile, bring a pot of salted water to a boil. Cook tortellini according to package label instructions, about 7 minutes. Drain and run under cold water, then drain again. Boil peas, if desired, until done.
In a large bowl, whisk together mayo and lemon juice. Mix in tortellini and cooked peas to coat. Season with salt. Gently stir in salmon and basil and serve.

Ham & Pea Pasta (Krista Christensen & Heidi Maxfield)

Heidi shared some of her leftovers of this recipe and it was SOOOO GOOD!
I love the Parmesan flavor it has.
(There is more flavor than meets the eye)
1 cup frozen green peas (put in the microwave for about 1 minute to thaw)
2 Tbsp unsalted butter
1 cup sliced fresh mushrooms, optional
1 cup turkey ham, chopped
1/2-1 cup cup heavy cream
1/2 tsp salt
1/4 tsp fresh ground pepper
1 lb linguine, fettucine or other long pasta (I used cavatappi - the spirals, or bowtie is good too)
1/2-1 cup grated Parmesan cheese or more to taste (I always add more!)

Bring large pot of water to a boil and cook pasta according to package directions. While that cooks melt butter in a medium skillet over medium heat; add mushrooms and cook 3 to 4 minutes, until lightly browned. Add ham and cook 1 minute. Stir in peas, cream, salt, and pepper. Turn heat to low; keep warm, stirring occasionally, while pasta is cooking.
Drain pasta, Toss pasta with butter mixture. Add Parmesan and toss. Serve immediately.

Baked Spaghetti


Taylor's Favorite!

12 oz. spaghetti - broken in half and cooked (I just use left over spaghetti noodles)
8 oz. mozzarella mixed with 8 oz. colby jack cheese (or more if you're a cheesaholic)
4 oz. shredded Parmesan cheese for the very top of the casserole.
1.5 lbs. ground beef, cooked with 1 c. chopped onion, 2 cloves garlic finely chopped, and 1/2 c. sliced mushrooms,
then add 2 LARGE cans/bottles of your favorite spaghetti sauce (homemade or store bought)
Let sauce and meat simmer on low for 20-25 minutes.

Layer noodles, cheese, then sauce two times in a 9x13 pan. Top with 1/2 c. shredded parmesan. Bake at 375 for 30 minutes. Makes A LOT!

Most of the time, I use my left over spaghetti and left over spaghetti sauce and just layer... noodles, cheese, sauce (twice) and top with parmesan cheese. SUPER EASY dish to do with that leftover spaghetti.

These two sauces are my favorite. The Prego is sweet and the Hunts is more italian.
